Coffee Extraction Explained: Ratio, TDS & the 18-22% Rule
Coffee extraction percentage is the share of the dry grounds, by weight, that dissolves into your cup, and the golden ratio sets how much water meets that coffee. The Specialty Coffee Association targets an 18-22% extraction yield at a 1.15-1.35% strength, brewed near a 1:18 ratio of coffee to water, for a balanced, sweet result.
That sounds like alchemy, but it is just physical chemistry with a number attached. A roasted coffee bean is only about 30% water-soluble; the other 70% is cellulose and structural fiber that stays behind in the filter. Of the soluble third, only the first part tastes genuinely good. Brewing well is the art of dissolving most of the delicious solubles while leaving the harsh ones in the grounds, and extraction percentage is how we measure whether we succeeded.
The two numbers that define a cup: strength and extraction
People conflate "strong" and "over-extracted," but they are independent dimensions. Strength is concentration: how much dissolved coffee sits in the liquid, measured as Total Dissolved Solids (TDS) and expressed as a percentage of the beverage's weight. A typical drip coffee is 98.5-99% water and just 1.0-1.5% dissolved coffee. Extraction yield is completeness: what fraction of the original dry grounds you pulled out. You can have a strong-but-under-extracted brew (too much fine coffee, sour and intense) or a weak-but-over-extracted one (too little coffee brewed too long, thin and bitter).
TDS is measured with a refractometer, a small optical device that reads how much light bends passing through a drop of brewed coffee. More dissolved solids bend light more. The instrument actually reports degrees Brix, which is converted to coffee TDS by a factor of roughly 0.85 (1 °Bx ≈ 0.85% TDS), because coffee solubles refract differently from the sugar solutions Brix was calibrated on.
The formula: turning three weights into a percentage
Extraction yield is not measured directly. You infer it from three weights and one refractometer reading. Weigh your dry dose, weigh the finished beverage in the cup, measure its TDS, and the rest is arithmetic:
Extraction % = (Beverage Weight × TDS%) / Dry Dose
Worked example: brew with a 15 g dose, end up with 220 g of coffee in the cup, and measure 1.35% TDS. Then (220 × 1.35) / 15 = 19.8% extraction, comfortably inside the ideal box. The logic is simple bookkeeping: the dissolved mass in the cup (beverage weight times its TDS fraction) all came from the dose, so divide one by the other. Purists refine the dose term by subtracting about 3.5% for moisture and trapped carbon dioxide that are not extractable solids, which nudges the result slightly higher. Why 18-22% is the sweet spot
The magic of the window is that coffee compounds do not dissolve all at once. They leave the grounds in a predictable order set by molecular size and solubility, so extraction unfolds in phases.
- Early (the smallest, most soluble molecules): organic acids such as citric, malic, and chlorogenic acid, plus most of the caffeine. Bright and fruity, but sharp and sour on their own.
- Middle (the sweet spot): soluble sugars and caramelized Maillard-reaction products from roasting. This is where body, sweetness, and balance live.
- Late (the slow, stubborn ones): bitter phenolics, dry tannins, and heavier woody compounds that dissolve last.
Stop the process too early and you have only pulled the acids: that is under-extraction, and it tastes sour, salty, and hollow. Push too far and you start dissolving the late, bitter, astringent compounds that overwhelm everything: that is over-extraction. The 18-22% band is the zone where you have captured nearly all the sweetness and acidity but almost none of the bitterness. Conveniently for us, nature put the good stuff first.
The golden ratio and the SCA control chart
The "golden ratio" is the lever you pull before brewing even starts. The SCA's classic guideline is about 55 grams of coffee per liter of water (roughly 1:18), with a generous ±10% tolerance. In practice many specialty brewers prefer a punchier 1:15 to 1:17. The ratio mostly sets strength; grind, temperature, and time fine-tune extraction. The numbers interlock, because along the chart's ideal diagonal:
Extraction % ≈ TDS% × Brew Ratio
So a 1.25% TDS at a 1:16 ratio lands near 20% extraction. This relationship is the heart of the SCA Brewing Control Chart: a two-axis graph plotting strength (TDS, vertical) against extraction yield (horizontal), with a target rectangle in the center. How to move on the chart
To raise extraction without changing the ratio: grind finer (more surface area), brew hotter (the SCA targets about 92-96 °C / 197-205 °F), extend contact time, or add agitation. To lower it, do the reverse. Finer grounds expose more bean to water and also slow drainage, which is why grind is the single most powerful dial most brewers have.
A target, not a law
The framework is genuinely old. In 1957, MIT-trained biochemist Ernest E. Lockhart, the first director of the Coffee Brewing Institute, published the original Coffee Brewing Control Chart, defining the two-metric strength-and-extraction model and the 18-22% / 1.15-1.35% ideal that the industry still teaches almost 70 years later. But modern grinders extract far more evenly than 1950s equipment, and a 2021 University of California, Davis study (Cotter and colleagues, sampling 118 black-coffee drinkers) found that people's preferences spread across a far wider range of strengths and extraction yields than the single ideal box implies, splitting into two distinct preference groups rather than one. The lesson: a number outside the box is not automatically bad. Extraction percentage is a powerful diagnostic and a fast way to make a fix repeatable, but it never overrules your tongue.
