What this spherification calculator does

This calculator turns a liquid batch mass into starter weights for two common molecular gastronomy workflows: direct spherification and reverse spherification. It uses the same concentration model as the calculator output: 0.6% sodium alginate, 2.0% calcium lactate, and bath water at about 2× the liquid mass.

Enter the liquid mass in grams, choose direct or reverse, and the labels change to show where each ingredient goes. The percentages are useful starting points for kitchen testing, not universal recipe guarantees. Alginate type, calcium salt, acidity, alcohol, sugar, pulp, dissolved air, and holding time can all change the final membrane thickness and texture.

Direct vs reverse spherification

Direct spherification blends sodium alginate into the flavorful liquid, rests the liquid so bubbles can rise out, and drops it into a calcium bath. The calcium diffuses inward, so the spheres keep firming after they leave the bath. Use direct spherification for small pearls or caviar-style drops that will be rinsed and served soon.

Reverse spherification puts calcium lactate in the flavorful liquid and drops that liquid into an alginate bath. The alginate forms a membrane at the surface and does not keep diffusing through the liquid center in the same way, so reverse spheres are better for larger spheres, dairy or calcium-rich liquids, and dishes that need longer holding.

Worked examples

500 g direct batch: the calculator returns 3.00 g sodium alginate to blend into the liquid, 10.00 g calcium lactate for the bath, and 1,000 g bath water. Rest the alginate liquid after blending, spoon or drip it into the bath, hold for roughly 30 seconds to 2 minutes, rinse, and serve soon.

750 g reverse batch: the calculator returns 4.50 g sodium alginate for the bath, 15.00 g calcium lactate to blend into the liquid, and 1,500 g bath water. Rest the alginate bath after blending, spoon the calcium-containing liquid into the bath, hold for about 2 to 3 minutes, rinse, and hold in clean water or neutral oil if needed.

Common mistakes

  • Mixing up the labels: direct puts alginate in the flavorful liquid; reverse puts calcium lactate in the flavorful liquid.
  • Not resting blended alginate: trapped air makes drops float, deform, or break. Resting gives bubbles time to escape.
  • Treating milliliters as exact grams: water-like liquids are close, but syrups, purees, and alcohol mixtures can have different density. Weigh the batch when precision matters.
  • Ignoring acid or calcium already in the liquid: acidic liquids, dairy, mineral-rich water, and calcium-rich juices may need recipe adjustment, sequestrants, or a reverse workflow.
  • Scaling before testing: run a small test, taste after rinsing, and adjust concentration or bath time before preparing a full batch.

What this calculator does not do

It does not predict membrane thickness, burst pressure, flavor balance, shelf life, food safety, allergen controls, or commercial process compliance. It also does not choose between calcium chloride, calcium lactate, and calcium lactate gluconate; different calcium sources can change gelation speed and taste.
